
SPICY FRIED CHICKEN & CHEESE SANDWICH
INSTRUCTIONS
Whisk together the buttermilk and hot sauce in a bowl.
Cut the chicken breasts into desired portions and submerge them in the buttermilk mixture. Cover and refrigerate overnight for maximum flavor.
In a small bowl, mix the mayonnaise and garlic powder. Set aside.
In another bowl, combine the flour, pepper, and chili powder.
Heat oil in a pan to 350F.
Remove the chicken from the buttermilk mixture and dredge it in the flour mixture until fully coated. Let the breaded chicken rest for 10 minutes before frying.
Fry the chicken until golden brown and the internal temperature reaches 165°F.
In a warm pan, melt 2 teaspoons of butter per bun and toast the buns until golden.
Place two slices of Queso-Melt on each piece of fried chicken and bake in a 400F oven until the cheese melts.
Spread a spoonful of pepper relish on the bottom bun.
Place the fried chicken on the relish and top with a handful of arugula.
Spread the garlic mayo on the top bun and place it on the sandwich.
Serve immediately while warm and enjoy!

1-2 (8 oz) Queso-Melt Jalapeno Block (Cut into 12 Strips)
3 large chicken breasts (butterflied – cut into half-length wise)
2 cups buttermilk
2 tbsp hot sauce
2 cups all-purpose flour
2 tsp kosher salt
2 tsp black pepper
2 tsp chili powder
4 cups vegetable oil
½ cup Doux South pepper relish
2 cups arugula
1 cup dukes mayonnaise
1 tbsp garlic powder
6 brioche buns
4 tbsp clarified butter
